PASTA STEW (or you may use rice)

Take a large bowl and throw into it:

tomatoes and/ or pimientos
artichoke hearts either frozen or from little jars (I like the latter better)
red onion
little black olives (pitted)
nuts (if people aren't allergic)
garlic (lots)
mozzarella cheese
any kind of cooked meat if people aren't vegetarians. I like chicken or turkey.
optional: raw broccoli, etc.
cooked pasta* (shells or small pasta rather than long strings)

*If you throw the pasta in when it is warm, it will help melt the cheese.

olive oil  (from the artichoke jars)
salt and pepper

Serve at room temperature. Make lots. Leftovers are  great.
