3 cups mashed sweet potatoes (boil 20-30 min.)
1 cup sugar
2 eggs
1 tsp vanilla extract
1/2 cup butter (you must use real butter!)
1/3 cup milk

Mix these ingedients in a large mixing bowl until smooth and spread in a long shallow casserole dish. Then mix together the following:

1 cup brown sugar
1 cup chopped nuts (I prefer pecans but some folks use walnuts)
1/3 cup butter 1/3 cup flour

This is the topping--the "crunch." Because it's hard to spread on top of the sweet potato casserole (really, you'll just be dropping it on in little dollops until the casserole's covered), I usually double the topping, which makes it crunchier and yummier.
